Ingredients
- 1 pound cubed, peeled Yukon potatoes
- 1/4 cup 1% low-fat milk
- 2 Tablespoons mascarpone cheese
- ½ teaspoon salt
Instructions
- Place potatoes in a large saucepan; cover with water. Bring to a boil, reduce heat, and simmer 15 minutes or until tender.
- Drain. Return potatoes to the pan.
- Add milk, mascarpone cheese, and salt. Mash to desired consistency.
