Mascarpone Mashed Potatoes

Ingredients

  • 1 pound cubed, peeled Yukon potatoes
  • 1/4 cup 1% low-fat milk
  • 2 Tablespoons mascarpone cheese
  • ½ teaspoon salt

Instructions

  1. Place potatoes in a large saucepan; cover with water. Bring to a boil, reduce heat, and simmer 15 minutes or until tender.
  2. Drain. Return potatoes to the pan.
  3. Add milk, mascarpone cheese, and salt. Mash to desired consistency.
