Make Your Own Smoothie Bowl

Summer is here! That means lots of fabulous options at the farmers’ market with fresh fruits and vegetables galore. And blueberries.

There is nothing quite like the sweet taste of fresh summer berries. And now I was in need of something to do with all these blueberries. After visiting two of my favorite resources for healthy recipes, EatingWell and Skinnytaste, I knew this summer was off to a delicious start.

You have probably heard, seen, or tasted the trendy concept of a smoothie bowl or an acai bowl. An acai bowl is made up of frozen acai berries mixed with other typical smoothie ingredients (varies on recipe but bananas, strawberries, etc) blended to make a thick smoothie. It is then topped with granola, fresh berries, sometimes nuts, honey, coconut flakes, or other toppings. Instead of drinking it like you would a smoothie, it is put in a bowl and you eat it with a spoon (it’s thicker than a smoothie). And it is delicious!

By eating it in a bowl with a spoon, it allows you to become more mindful and slow down instead of slurping through a smoothie (while you are most likely doing something else at the same time). Although acai bowls can be expensive, I found a great EatingWell recipe to make it at home and I skipped the acai berry as that can be pricey as well. I used fresh blueberries, frozen banana, frozen strawberries, frozen spinach, coconut water, and ice cubes. The result? A delicious smoothie bowl. The typical acai bowl toppings can be high in sugar, so I stuck with a little bit of granola, nuts, and berries. I also made the granola at home so I could control the amount of sugar and oil added.
